Fudgy Pumpkin Brownies

Basil goes to “his grandparents” house when we are out of town.

After about 30 minutes, he is comfortable and happy, and running the show, I hear. My parents have two dachshunds of their own, so it truly is a Long Dog Party over there.

To thank my parents for watching Basil while we were on vacation,
I made some sweets.

These are dense and chewy – almost like fudge.


Fudgy Pumpkin Brownies

1 cup sugar
1 can pumpkin
1 egg (I used Ener-G egg replacer)
3 teaspoons vanilla
1 1/3 cups flour (I used a mix of tapioca + GF all purpose)
3/4 cup cocoa
1/2 teaspoon baking powder
1/4 teaspoon sea salt
3/4 cup chocolate chips (I used Whole Foods vegan)

Combine sugar and pumpkin – add egg and vanilla. Combine flour, cocoa, baking powder + salt, add to sugar mixture. Stir in chocolate chips.

Bake @ 350, 50 minutes or until inserted toothpick comes out clean.

I had to taste test, of course. With Barney Butter, of course.

  5. I haven’t heard of pumpkin brownies before but then I’m not American and we don’t used canned pumpkin either. I guess I could boil then mash to the correct consistency and it would still work well. We do pumpkin scones and pumpkin fruitcake and they are both delicious. Thanks for sharing this recipe.
