I am so excited about this dessert.
I have yet to see a healthier truffle, and they are so easy to make and SO tasty.

Healthy Date Truffles
(adapted from Edible Nutrition)
Ingredients
15 pitted dates
2/3 cup cocoa powder
1 cup almonds
1 tablespoons coconut oil
1/8 cup water (to texture)
cinnamon for dusting (optional)
coconut for dusting (optional)
Directions
Mix ingredients in a food processor. Add water gradually until you reach desired texture. Pull apart about a teaspoon size of mixture and roll into a ball. Dust with cinnamon or coconut, or just eat them plain!
Now, I’m not advocating eating these for every meal. There are dates in the recipe and, therefore, sugar but this is an excellent option when you are craving a delicious chocolate treat.

I need to get kicked back into no sugar, the holidays (and the accident) are wreaking havoc on my eating. Ugh!

Oh no doubt, worst time of year to be un-mobile and irritated. I’m making them this weekend, we always have dates in the house, on of my fav pre-workout foods :)
