Mint is often associated with gum or candy as well as other desserts and even toothpaste but it does not mean that you should limit it to those areas. Mint is a herb that can be included into your diet as something more than a breath freshener. Have you ever put mint on top of a spicy soup? How about using it as part of your coconut milk smoothie?

Why did I get started on mint? I had decided to turn the idea of a mint Oreo into a waffle after seeing the Oreo used in a cupcake. I am a firm believer that any cupcake or dessert can be converted into a healthy version via the waffle (see recipes for Black Forest Cake Waffle and Carrot Cake Waffle.) When I went to the grocery store I bought a rather large bunch of mint leaves only to find out that I didn’t need as much. Not wanting to waste the mint I began placing the leaves into my water instead of the normal standby of lemon.
The mint made drinking water a little different and I have also since added it to hot tea. I drink quite a bit of green tea and adding the mint changed the flavor profile just enough to discern that it wasn’t just plain green tea.
